The Giannotti farm, which we own, produces most of the seasonal vegetables served in the Restaurant of La Lanterna Hotel. We also produce all the extra-virgin olive oil. The farm grounds lie in the municipality of Sarteano where we produce our Tuscan extra-virgin olive oil. November and December are dedicated to olive oil making, as olive harvesting takes place during these months (performed strictly by hand), followed by olive pressing in a crusher (strictly within twenty-four hours of harvesting).
Our vegetable garden is in Sarteano too and, according to the season, offers vegetables of all kinds: tomatoes, aubergines, lettuce, peppers, artichokes, peas and many more.
